Peach Glazed Slow Cooker Ribs

Peach Glazed Ribs

3 lbs. pork country style ribs
1 medium onion, sliced and separated into rings
1 18 oz. jar peach or apricot preserves
1/2 C. orange juice
2 Tbsp. bottled teriyaki sauce
1 tsp. crushed red pepper flakes (less if you are a wuss)
4 cloves garlic, minced

In 5 to 6 quart slow cooker, place onion. Add ribs. In a medium bowl combine peach preserves, OJ, teriyaki sauce, crushed red pepper flakes and garlic. Reserve 1 C. of mixture to use as a sauce for serving. Chill until needed. Pour remaining peach mixture over ribs in cooker.
Cover and cook on low setting for 7 to 8 hours. or on high for 4-5 hours (I don’t recommend high, they dry out)
For sauce, in a small sauce pan bring reserved peach mixture to a boil. Reduce heat and simmer for 5 minutes. Remove ribs and onion from cooker. Discard cooking liquid. Pour sauce over ribs and serve atop bed of onions.
*****Extra step for presentation. I preheat the broiler, lay the ribs on a baking sheet, and baste with some of the reserved sauce. Place them under the broiler just enough to carmelize the sauce and give them some great color!

[…] made many times before with success. In fact, I’ve posted all but one on my blog. We had the Peach Glazed Ribs, Oven roasted potatoes, cole slaw, corn on the cob, corn muffins, and peach crisp with maple cream […]

[…] One of today’s recipes is already posted in my sidebar under ‘favorites’. I love these things. I’m not kidding here either. I make them all the time, especially for company. Kelly even makes a joke of it. I’ll be like, “Kelly, what should I make when the so and so’s come on Friday?” And he’ll say, “Dude! Bust out the ribs, girl! Isn’t that your stand by?” And then I think to myself, Why do I even ask him? They are perfect for a Sunday because you throw them in your slow cooker in the morning and leave them alone all day long. The best part is that when I come home from church, it smells like somebody made dinner for me. It makes me so happy. Peach Glazed Slow Cooker Ribs Slice the onions into rings. (or half rings) Make a bed in the bottom of the slow cooker with the onions. Trim the excess fat off the ribs, then place them evenly over onions. Now, it’s time to make the glaze. You can adjust the garlic and red pepper flakes to your liking, but the recipe is just how I like it. This is all you need: Whisk it all together and reserve a cup of mixture for later. Pour the remaining glaze over ribs. Set slowcooker on low, slap a lid on it and you are golden. They cook for 8 hours. Low and slow, baby. Low and slow. . This next item is also one of my favorite things. I guess that was the theme for today. Also, I spent a huge amount of time reading a book outside on my deck. It was the day of Kelly Anne. My favorite kind. These corn cakes are kind of like corn bread, but loaded with vegetables and flavor and they are also more dense. They go really will with barbeque or ribs like this. Sweet and spicy. (Just like me…ha!) Corn Cakes […]
